My Power Salad

Loaded with veggies and protein from the eggs, this salad is packed with amazing flavor. Perfect for lunch or dinner. For additional protein add a side of grilled chicken breast or Atlantic salmon.

1 Small diced avocado
2 Cups spring mixed salad
¼ Cup beet
¼ Cup carrot
½ Small shallot / onion
¼ Cup diced cucumber
¼ Cup diced tomatoes
2 Hard boiled eggs

3 Tablespoons olive oil
1 Tablespoon Balsamic vinegar
1 Tablespoon apple cider vinegar
1 Tablespoon Dijon mustard
1 Teaspoon old style mustard
Pinch black pepper (salt optional)

Toss spring salad, avocado, beets, carrots, shallots/onions, cucumber, tomatoes and eggs in a bowl, mix well. Mix olive oil, balsamic vinegar, apple cider vinegar, Dijon and old-style mustard, black pepper into a bowl and add to salad. Toss well and serve!
