I found this recipe on Pinterest and made some adjustments to it. This recipe is sweet, crunch and flavorful. The mixture of the sweet, salty along with the zesty lime taste like a party in your mouth. It’s to die for. It can be served alongside grilled salmon or chicken. For a Vegan option omit the feta cheese.
1/3 Cup extra-virgin olive oil
2 cups fresh corn
½ cup cherry tomatoes, halved
4 ounces feta cheese, cubed
1 Tablespoon Lime juice
1 bunch fresh cilantro, roughly chopped
½ Bell pepper (optional)
1 Small jalapeno pepper (optional)
salt and freshly ground black pepper
In a large bowl, add corn, tomatoes bell and jalapeño peppers. Stir in feta cheese, lime juice and olive oil. Mix in cilantro, black pepper and salt. Serve at room temperature.
