This healthy breakfast cookies are gluten free, vegan and low in sugar. They taste great and takes only 30 minutes to whip up.

. 2 Cups gluten free quick oats
.1 Large banana (mashed)
. 1 Cup peanut or almond butter
. 1 Teaspoon ground cinnamon
. 1/4 Cup ground flax
. ½ Teaspoon Vanilla extract
.  ¼ Cup honey or pure maple syrup
.  ½ Cup dried cranberry
.  ½ Cup pumpkin seeds
.  ½ Cup raisins
.  ½ Cup walnuts


  • Preheat oven to 325F. Line two large baking sheets with parchment paper. Set aside.

  • Combine all of the ingredients into a large mixing bowl, mix with hand mixer. Mix until all the ingredients are combined. The dough is thick and heavy
  • Using a ¼ cup measuring cup, portion ¼ mounds of cookie dough onto prepared baking sheets. Using the back of a spoon slightly flatten into a cookie shape
  • Bake for 18-25 minutes or until the edges are slightly brown. Cool cookies on the baking sheets for 10 minutes, transfer to a wire rack to cool completely.
